Recipes

Hello my friends,
 I promised I would share the recipe for the raspberry/plum oatbars. They didn't last long, I took them to work and they were gone by the end of my shift at 3:30. They are really easy to make.

You need a 9x13 baking dish.
2/3cups of sugar
2/3cups of brown sugar
1 cup of butter, softened
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla
1/2 teaspoon baking powder
1/2 teaspoon salt
3 cups oats
1 cup flour
1 to 1/2 cups raspberry jam and or plum jam. I mixed the two since I didn't have much of either on hand.

Heat oven to 375. Mix all ingredients except oats, flour and jam in large bowl. Stir in oats and flour. Divide mixture in half. Grease 9x13 baking pan.

 Put half of mixture in pan and gently press down. Bake mixture for 10-12 minutes. Take mixture out of oven and spread with jam.


 Top with remaining cookie mixture. It will be crumbly. Return to oven and bake for an additional 15 to 20 minutes. Top will be golden brown. Let cool and slice and enjoy.
There were also several requests for the lemon cake I made. Here is that recipe.
2 1/2 cups sugar
1 stick butter,softened
1 teaspoon lemon extract
5 eggs
3 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
1teaspoon lemon zest

For glaze,
1/3 cup butter
2 cups powdered sugar
1/2 teaspoon lemon zest
3-4 tablespoons lemon juice

Heat oven to 350. Grease bottom and sides of two 9x5 loaf pans, with shortening and dust with flour.
Beat sugar, butter, vanilla and eggs in large bowl with an electric mixer on low speed for 30 seconds, scraping bowl constantly. Beat on high speed for 5 minutes, scraping bowl occasionally. Mix flour, baking powder and salt. Beat flour mixture into sugar mixture alternately with milk on low speed. Spread in pan. Bake loaf pans for 50-60 minutes or until toothpick inserted in middle comes out clean. Cool 20 minutes on wire rack. Glaze.
For glaze, melt butter and then add all the ingredients and stir together. Drizzle over cakes.
Like I said yesterday, I started eating this before it was even glazed. Lol.

P.S. When I posted I put the recipe for plain pound cake, I just fixed it. I was copying the recipe from an old hand written recipe card and the lemon changes were on the back. Duh. It was the end of a work day, what can I say. Both are good but the lemon cake is the best.

  5. I apologize, lol, I was really tired when I posted and copying from old handwritten notes. I am will fix the post now. Omit the vanilla and add 1 Tablespoon of lemon zest and 1 teaspoon of lemon extract. Yesterday was kind of a long day, thanks for catching that. :)
